Spanish Omelette
Spanish tortilla or omelette is a traditional dish from Spain and one of the signature dishes in Spanish cuisine. It is an omelette made with eggs and potatoes, optionally including onion.

Ingredients:
1 large potato
1 large onion
1 tsp extra-virgin olive oil
3 eggs
salt and pepper as per taste
Instructions:
Scrape the potato or leave the skins on, if you prefer. Cut them into thick slices.
Chop 1 onion.
Heat 150ml extra-virgin olive oil in a frying pan, add the potatoes and onion, and some salt, stir occasionally until the potatoes are softened.
Beat 3 eggs separately, then add the potatoes, onion, and salt and pepper. (You can also add spices of your choice)
Pour everything into the pan and cook from both sides on a moderate heat.
