Quarantine Salad

In order to make something delicious, you need not run to a store and buy any fancy ingredients. This quarantine salad is an example of how you can work wonders even with very limited ingredients.

Lockdown has created a shortage of many food items and obviously you can’t step out every now and then for even grocery shopping. So just find whatever you can there are tons of options to create your own tasty salad in minutes.

Ingredients:

For Salad dressing -

1. Olive Oil/ sesame/ peanut/ refined oil – 1+ 1/2 tsp

2. Lemon juice/ Vinegar/Apple cider vinegar – 2 tbsp

3. Honey/Maple syrup/brown sugar/powdered sugar/ sugar – 2 tsp

4. Mustard/chilli flakes/Tabasco/chilli powder – 1 tsp

6. Mint/coriander/basil/oregano – 1 tsp

8. Salt

9. Black pepper powdered

Salad ingredients:

1) Salad greens - 1 cup

Options: Spinach/Methi/Lettuce/Coriander/Mint

2) Any assorted vegetables (blanched or sautéed or cut and chopped depending on how you like them) - 2 cups

Options: Mushroom/Broccoli/Beans/Carrots/Cauliflower/Potato/Corn/Capsicum/ Olives/ Bell peppers

3) 1 Chopped onion

4) 2 chopped tomato

5) 1 chopped cucumber

6) Dry roasted nuts (pine nuts, walnuts, almonds, cashew or peanuts)

7) Dry roasted white sesame or black sesame/fennel seeds/onion seeds/flax seeds/chia seeds/pumpkin seeds.

8) Apple/Strawberry/grapes/pear/kiwi/pineapple/pomegranate/Mango (any one fruit)

9) Any pasta or noodles.

Options: Boiled Quinoa, Chickpeas, Rajma, Dal, or any other grains such as oats can be used.

Method:

1) Clean the greens, chop them, and keep them soaked in the fridge. (I just had coriander so I used no other greens)

2) Take salad and dressing ingredients of your choice from above, assemble them all in a salad bowl, and give a toss. Serve cold.
