Oats Pancake
These fluffy pancakes are 100% gluten-free and are made from oats flour only. There is no need to add all-purpose flour at all. They are no less than the usual pancakes in terms of taste and are easy to make. Plus they are healthier substitutes to the all-purpose flour pancakes.
Top them with fruits of your choice and chocolate syrup. You can also use honey or maple syrup instead of chocolate syrup.
Ingredients:
1+ 1/2 cup oats
1 cup milk
1/4th tsp salt
1/2 tsp cinnamon powder (you can add more to get a strong flavor)
1+ 1/2 tsp baking powder
2 eggs
1 tbsp vanilla essence (optional)
2 tbsp extra virgin olive oil
2 tbsp brown or normal sugar
Instructions:
Blend the oats to a smooth powder.
Add the salt, cinnamon and baking powder to oats flour.
Now in a separate bowl break two eggs and add the sugar, vanilla essence, milk, and olive oil.
Whisk the mixture thoroughly.
Now add the egg mixture to the oats flour and mix nicely to get a lump-free smooth batter.
Keep this final mixture aside for 10 min.
Now heat a greased pan on low flame.
Pour about 1/4th cup batter on the pan and spread it just slightly. (Do not spread it too much)
Cook the pancake from both sides till you get a nice golden color.
Serve hot topped with chocolate syrup/ honey/ maple syrup and fruits.
